- 350g Fresh wide rice noodles
- 2 whole Eggs
- 250g Broccoli, small florets and sliced stem
- 10g Garlic, minced
- 25g Soy sauce
- 10g Dark soy sauce
- 8g Sugar
- 10ml Rice vinegar
- 20ml Rapeseed oil
- 50ml Water

The method
Get everything ready
Separate noodles gently, warming only as their packet directs. Cut broccoli small. Beat eggs and mix both soy sauces, sugar and vinegar separately. Prepare everything before heating.
Steam the broccoli
Add broccoli and water to the pan over medium-high heat. Cover briefly, then stir until nearly tender. Move to a bowl and dry the pan.
Cook the eggs
Warm half the oil. Add garlic for 20 seconds, then eggs; stir until set. Add to the broccoli bowl.
Sear and coat the noodles
Heat remaining oil over medium-high heat. Add noodles in a thin layer; work in batches for four portions. Let them colour briefly, then turn gently and add sauce. Avoid vigorous stirring that breaks them.
Combine
Return broccoli and eggs. Toss gently until noodles are heated for their packet time and everything is steaming hot.
Check and serve
Serve immediately; the noodles should be tender, glossy and intact.
Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.
Make the kitchen ready again
Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.
Cooling, storing & reheating
Divide leftovers into small portions, cool and refrigerate within 1–2 hours. Keep your fridge at 0–5°C. Eat within 48 hours or freeze promptly. Defrost in the fridge and use within 24 hours of fully defrosting. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
