The method

  1. Get everything ready

    Dice onion and mince garlic. Drain beans and measure tomatoes, chilli and oil. Set out eggs and tortillas.

  2. Warm tortillas

    Warm tortillas in a dry pan following the packet and cover on serving plates.

  3. Cook tomato and bean sauce

    Use half the oil to soften onion. Add garlic, chilli and tomatoes; simmer and stir until thickened. Add beans and heat through. Divide over the tortillas.

  4. Cook the eggs

    Wipe the pan and warm remaining oil over medium-low heat. Crack in eggs, leaving space, and cover. Cook until whites and yolks are set. Work in batches if needed, allowing more time.

  5. Check and serve

    Place the fully cooked eggs on the tomato-bean tortillas and finish with coriander. Eat promptly.

    Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.

  6. Make the kitchen ready again

    Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.

Cooling, storing & reheating

Divide leftovers into small portions, cool and refrigerate within 1–2 hours. Keep your fridge at 0–5°C. Eat within 48 hours or freeze promptly. Defrost in the fridge and use within 24 hours of fully defrosting. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
