The method

  1. Get everything ready

    Drain beans, dice onion and mince garlic. Mash beans very thoroughly with a potato masher, adding some measured water until pourable; a blender gives a smoother sauce.

  2. Make the bean sauce

    Warm half the oil and soften onion. Add garlic briefly, then mashed beans and the rest of the water. Stir at a gentle simmer until hot and smooth enough to coat a spoon. Transfer sauce to a warm bowl.

  3. Warm the tortillas

    Wipe the pan. Brush tortillas with remaining oil and warm in batches until pliable, following their packet instructions; do not crisp them.

  4. Check and serve

    Dip each warm tortilla into hot bean sauce with tongs. Fill with some feta, fold and place on plates. Spoon over remaining sauce, yoghurt, coriander and remaining feta. Eat while warm.

    Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.

  5. Make the kitchen ready again

    Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.

Cooling, storing & reheating

Divide leftovers into small portions, cool and refrigerate within 1–2 hours. Keep your fridge at 0–5°C. Eat within 48 hours or freeze promptly. Defrost in the fridge and use within 24 hours of fully defrosting. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
