The method

  1. Get everything ready

    Dice tomatoes and cucumber and chop parsley. Slice halloumi and pat dry. Read bulgur packet instructions; grains vary in cooking time and liquid needs.

  2. Start the bulgur

    Put bulgur and water in the pan, following the packet ratio if different. Bring to a simmer, stir once and cover.

  3. Cook the grains

    Simmer on low for the packet time until tender; add hot water and extend if still firm. Drain any excess and transfer to a serving bowl.

  4. Sear the halloumi

    Dry the pan and heat oil over medium-high heat. Lay halloumi in one layer and cook about 2 minutes per side until golden; cook in batches if needed.

  5. Check and serve

    Toss bulgur with tomatoes, cucumber, parsley and lemon juice. Top with hot halloumi and eat promptly while the cheese is soft.

    Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.

  6. Make the kitchen ready again

    Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.

Cooling, storing & reheating

Divide leftovers into small portions, cool and refrigerate within 1–2 hours. Keep your fridge at 0–5°C. Eat within 48 hours or freeze promptly. Defrost in the fridge and use within 24 hours of fully defrosting. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
