Soba and edamame salad

- 160g Dried soba noodles
- 180g Frozen shelled edamame
- 180g Cucumber, fine strips
- 100g Carrots, fine strips
- 25g Soy sauce
- 20ml Rice vinegar
- 10ml Sesame oil
- 5g Sugar
- 10g Sesame seeds
- 1500ml Water

The method
Get everything ready
Cut cucumber and carrot into fine strips. Mix soy sauce, vinegar, sesame oil and sugar in a large bowl. Read noodle and edamame packet cooking times.
Cook the edamame
Bring water to a rolling boil. Add edamame and cook for its packet time until hot through and tender. Lift out with a slotted spoon into a colander.
Cook the soba
Return the water to the boil and add noodles. Stir and cook for the packet time; drain and rinse under cold running water as the packet directs to stop cooking.
Check and serve
Drain noodles and edamame thoroughly. Toss with the dressing, cucumber and carrot. Scatter sesame seeds and eat promptly; do not leave cooked noodles sitting at room temperature.
Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.
Make the kitchen ready again
Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.
Cooling, storing & reheating
Divide leftovers into small portions, cool and refrigerate within 1–2 hours. Keep your fridge at 0–5°C. Eat within 48 hours or freeze promptly. Defrost in the fridge and use within 24 hours of fully defrosting. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
