The method

  1. Get everything ready

    Prepare all vegetables before heating the pan. Check the noodle packet time. Mix soy sauce and sesame oil in a cup.

  2. Cook and drain noodles

    Boil the water and add noodles. Cook just to the packet's tender stage. Drain well and rinse only if the packet advises it.

  3. Stir-fry vegetables

    Dry the pan. Heat rapeseed oil over medium-high heat. Stir carrots and mushrooms first, then add cabbage. Keep tossing until tender with a little bite. Add garlic near the end.

  4. Toss the noodles

    Add noodles, the mixed sauce and spring onion. Lift and turn with tongs until hot throughout and evenly coated; add a small splash of water if sticking.

  5. Check and serve

    Serve immediately. This is a soft noodle version, not a deep-fried crispy chow mein.

    Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.

  6. Make the kitchen ready again

    Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.

Cooling, storing & reheating

Divide leftovers into small portions, cool and refrigerate within 1–2 hours. Keep your fridge at 0–5°C. Eat within 48 hours or freeze promptly. Defrost in the fridge and use within 24 hours of fully defrosting. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
