The method

  1. Get everything ready

    Rinse rice. Finely chop onion, pepper, garlic and coriander for a simple sofrito. Cut chicken with separate utensils and wash hands and equipment.

  2. Brown the chicken

    Warm oil over medium-high heat. Brown chicken in one layer, then move to a clean plate. It will finish cooking with the rice.

  3. Cook sofrito and rice

    Lower heat to medium. Soften onion and pepper, add garlic and coriander, then tomato puree, cumin and oregano. Stir in rice, stock and olives. Return chicken and bring to a simmer.

  4. Cook covered

    Cover and turn heat low. Add peas for the final 5 minutes. Extend if rice is hard, adding hot water if dry, and check several chicken pieces. Use a clean probe in the thickest part: at least 70°C for 2 minutes (or 75°C for 30 seconds). Check every portion. Without a probe, cut the thickest part: it must be steaming hot, with no pink flesh and clear juices. If not ready, keep cooking and check again.

  5. Rest before serving

    After the chicken check passes, turn off heat and leave covered. The rice will settle and finish absorbing moisture.

  6. Check and serve

    Fluff gently and check rice is tender. This simplified sofrito omits some traditional ingredients such as ají dulce and culantro. Serve rice straight away. Cool any leftovers within one hour, refrigerate and use within 24 hours. Reheat only once until steaming hot throughout.

    Check: Confirm all earlier doneness checks before serving. A timer alone cannot confirm food is ready.

  7. Make the kitchen ready again

    Switch off heat that is no longer needed. Put leftovers in shallow containers for prompt cooling. Serve rice straight away. Cool any leftovers within one hour, refrigerate and use within 24 hours. Reheat only once until steaming hot throughout. Let hot equipment become safe to handle, then wash the pan, tray and utensils before the next dish. Allow longer if needed.

Serve rice straight away. Divide leftovers into small portions, cool within one hour and refrigerate at 0–5°C. Use within 24 hours. Reheat only once, until steaming hot throughout. Follow any stricter pack instructions.
